For me, the best thing (sorrrrrry) about Hainanese chicken is the chilli sauce. The best thing about Chinese white-cut chicken? The green onion and ginger oil. So this is my version, combining the best of both worlds. Pair the chicken with thin egg noodles, top with both sauces. Add your own coriander or sliced cucumbers if you want. Slurp slurp slurp!
Ingredients
Sauce: Chicken thigh, garlic, ginger, green onion, sesame oil, eschallot, pandan, soy, sugar.
Chilli sauce: red long chilli, ginger, garlic, lemon, lime, sugar, salt, chicken stock.
Scallion oil: Green onion, ginger, grapeseed oil, chicken powder (621), mushroom powder, sugar, salt, white pepper.
