OK, not completely traditional (FISH SAUCE ALERT), but it's got all the markings of a classic bolognese. This is my version, with the addition of fennel, fish sauce and nutmeg as my secret (not anymore!) ingredients. A labour of love – San Marzano tomatoes are roasted in pepesaya butter for a couple of hours on their own before they get to know the rest of the sauce for another 6 hours.
Ingredients
Beef, Pork, tomato paste, tinned tomatoes, butter, onion, fennel, carrot, celery, milk, garlic, olive oil, white wine, dried porcini mushrooms, fish sauce, nutmeg, parmesan rind, basil, parsley, black pepper, salt, sugar.
