Baby abalone and abalone mushrooms are best friends here. The abalone is suuuuper slowly steamed in butter, koji and mirin in its own shell, then sliced. The sauce is made from the juices, eschalots, butter and abalone (aka oyster) mushrooms. Best paired with efu noodles. Top with green onions/chives! UGH.
